This is the most amazing baked potato I’ve ever had.
People brought so many amazing things to our baked potato potluck. The next day, I stared at the leftovers wondering where I should start. I proceeded by piling a little spoonful of everything on top of my potato until I couldn’t see it anymore.
From what I remember, it consisted of something like this:
- roasted cactus and onions
- two different kinds of bbq seitan
- Bacos (yes, they are vegan)
- green onions
- bean and rice salad
- two different kinds of vegan cheese sauce
- Tofutti sour cream
- jalapenos
- sun-dried tomatoes
My coworkers are always intrigued by the odd creations I bring to work for lunch. This one probably topped them all….But it was so delicious.
