If you have an over abundance of peppers and you feel like eating a greasy snack, try these pepper poppers. Theyre great!
You can use any kind of peppers you have, but I used jalapenos, mariachi peppers, and anaheim peppers because those are what I have in my garden. Just slice down one side of the pepper, fill it with stuffing, dip it in batter, and fry in vegetable oil until brown and crispy.


Stuffing:
- tofutti cream cheese
- nutritional yeast
- basil
- garlic
- chives
- salt and pepper
Batter:
- 1 cup flour (I used regular flour, but I bet chickpea flour would be really good).
- 1/2 tsp salt
- 1/2 tsp sugar
- 1 tsp tumeric
- 1 tsp baking powder
- 1 cup beer
- 3 Tb vegetable oil
- dash of cayenne pepper
I used peanut sauce for dipping because I had some left over, but a creamy dipping sauce made with a tofu/soymilk/tahini/lemon base would probably be really nice.
If you have leftover batter, you can use it to fry other vegetables. I fried some bananas and squash then squirted agave nectar on them. yum.
Ha! So this is where all of our garlic went, huh? Those poppers must have been potent!
